
Healthy Child-Friendly Warm Cinnamon Donuts

POV: You're a 90's kid and a warm cinnamon donut instantly brings back core after school visits to Donut King! But seriously, where there a busy little feet, there are hungry little tummies, so we decided to take a classic but put a healthier child-friendly spin on it – and it went down a treat!
Ingredients:
1 cup pumpkin puree
1 cup mashed very ripe banana(about 2 large)
½ cup unsalted butter (melted and slightly cooled; I used 50/50 butter and coconut oil because I had ran out! )
2 large eggs
1 teaspoon vanilla extract
2 cups wholemeal spelt flour (or flour of choice)
1/3 cup maple syrup
1 teaspoon baking soda
1 teaspoon cinnamon
Sprinkle of nutmeg
Sprinkle of salt
Method:
1. Preheat the oven to 180°C and grease donut moulds (I got mine from Kmart!)
2. Cook the pumpkin and once cooled mash.
3. Add all wet ingredients, mashed pumpkin, mashed banana, butter, eggs, maple syrup and vanilla to a large bowl. Stir to combine.
4, Stir in the flour, sugar, baking soda, spices and salt.
5. Pour batter into the prepared moulds. I had heaps left over so poured the rest into a loaf mould. Bake for 25-45 minutes or until cooked through (donuts took 25, loaf took 45)
6. Cool then remove from pan (carefully) and let cool on a wire rack until just warm.
